Buttermilk Pie

My mom used to make these pies all the time for my daddy. They were his favorite pies so I decided that I would try to make him one for his birthday. This is the recipe that my mom used. I have no idea where she got it so....
1 1/2 c. sugar
3 T. flour (self-rising)
3 eggs, beaten
1/2 c. butter
1 c. buttermilk
2 t. vanilla
deep dish pie shell, poke holes in the bottom of crust
Mix sugar & flour, stir in eggs, add butter & milk, add vanilla.
Bake at 425 F. for 10 minutes
then bake at 350 F. for 35 minutes
OR until golden brown on the top
*Refrigerate overnight for best results
So, I made this pie, actually I made 3 of them. Mom says to make each batch seperately, do not mix up more than one at the same time, for some reason they don't turn out right. Anyhow, I used stick butter and for some reason all the butter pooled on top of the pies, that is why it looks funky with a crater on it. Mom says that she used the butter in the bowl, she thinks it has more water in it or something so use the bowl butter. And I believe she said that she used a mixer, I hand mixed it so all the butter was chunky and at the top.
It is very very sweet! It doesn't taste like buttermilk, it was actually pretty good!

Turtle Bread



Turtle Bread






Ingredients2-1/4 to 2 3/4 cups all purpose flour1 tablespoon sugar1 package (1/4 ounce) quick rise yeast1 teaspoon salt1/2 cup water1/3 cup milk1 tablespoon butter2 eggs2 raisins
1. In a large mixing bowl, combine 2 cups flour, sugar, yeast and salt. In a small saucepan, heat the water, milk and butter to 120º - 130º. Add to dry ingredients; beat just until moistened. Add 1 egg; beat until smooth. Stir in enough remaining flour to form a soft dough.
2. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes. Shape dough into one 2-inch ball, four 1-1/2-inch balls, one 1-inch ball, and one large round ball.
3. For turtle shell, place the large dough ball in the center of a greased baking sheet. Place the 2-inch bacll at the top for the head; position the 1-1/2 inch balls on either side for feet. Shape the 1-inch ball into a triangle for tail; place on opposite side of large ball from head. Press all edges together to seal. Add raisins for eyes. Cover and let rise in a warm place until doubled, about 25 minutes.
4. Beat the remaining egg; brush over dough. With a sharp knife, make shallow diamond-shaped slashes across the top of the turtle shell. Bake at 350º for 35-40 minutes or until golden brown. Remove to a wire rack to cool.
I wasn't impressed with this dough, it was heavy and tasted like a biscuit. I'm going to try to find a better dough to use, something sweet and fluffy! If you have a recipe, please share!!

Yummy Chicken Salad


This looks kinda nasty but is super yummy!! Of course, with me I don't have measurements, lol. So, lets wing it! I have tried this with dark meat only and with white meat only. To me, the dark meat was better, it wasn't as dry but that is just me. Everyone at work loved it the first time I made it (with the dark meat).

Use your own judgement on quanities...

boiled chicken, picked free of skin & bone, shredded.
water chestnuts cut into small pieces
purple grapes or green grapes or both purple & green, sliced into fours
garlic roasted almonds, chopped or sliced
mayonnaise

Mix ingredients, serve cold with wheat crackers or on a cressant.

Peanut Butter Cake

I used a Betty Crocker Super Moist yellow cake mix. Cook as directed.
Frosting:
3/4 jar of peanut butter1/2 stick of butter
1 box of powdered sugar
5-8 Tbsp. whole white milk
Let butter warm to room temp, mix butter, peanut butter and 2 Tbsp of milk, mix well, slowly add powdered sugar and milk to the consistancy that you want. Keep mixing to get out the lumps. Refrigerate leftovers.
OMGosh! This is the best cake ever, it is sooo good!!

Grandma's Quiche


When I was little I can remember my Grandma always making quiche, it seemed everytime we went over there that she had some made or was making some. My mom recently gave me the recipe and I tried it out, OMGosh! It was soo good, so I thought I'd share.
2 deep dish pie shells
1 can evaporated milk
1-2 bag(s) of shredded cheese
1-2 cans of meat, your choice or you can use shredded or chopped meat of choice
6 eggs
veggies of choice
Mix all ingredients and pour into pie shells. Bake at 350 for 45 min/1 hour.
I have no idea who the original owner of this recipe is, I am NOT taking credit for it or giving credit to my Grandma.
